A friend at church shared this recipe with me and I love it. Growing up making something from scratch was baffling to me. I didn't know I could make a meal like this without a box of noodles and pre-mixed spices.
Skillet Lasagna

Ingredients
1/2 pound
Ground beef
1/4 cup
Onion, chopped
1 can (8 oz)
Tomato sauce
1 teaspoon
Italian herb seasoning
1 cup
Cottage cheese
1 1/2 cup
Egg noodles
1 tsp
Basil
1 can (14 oz)
Diced tomatoes
1 teaspoon
Parsley flakes
1 cup
Mozzarella cheese
Instructions
Brown ground beef and onion in a large skillet, drain fat. Mix in tomato sauce and herbs. Spread cottage cheese on top, then noodles. Mix parsley and basil with diced tomatoes, pour over noodles. Cover and simmer 25 minutes. Remove from heat and sprinkle with mozzarella cheese.
I tend to stir everything together before I cover and simmer the noodles. Then I don't feel bad about uncovering and stirring to test doneness.
